Oolong teas are kind of in the middle between un-oxidized green teas and fully oxidized black teas. This tea is made of the mature leaves which are larger. The process involves shaking the leaves and leaving them to “bruise” the edges, making them take brown or red color at the edges. The middle area of the leaf remains untouched and green. Depending on the desire of the tea maker, Oolong teas can be differently fermented and oxidized. There may be a range between Oolong teas: lightly fermented green teas with pale delicate tasting to fully fermented, dark bold flavored black teas.
