The name of this kind of teas originates from Pu-erh town in Yunnan province. It has gradually different taste due to the original processing method. Pu-erh is initially processed like a green tea using only broadleaf variety of the tea grown in Yunnan. After that the process is completely different. After drying the tea, you should age it in a dark place. The process may last for many years. The process includes long term oxidation by growing the yeast on the tea, much like the process of wine making. Absolutely unique taste is produced by the secondary oxidation, although the tea appears as black one. The same way as wines are made, if you make them right, you will get a pleasant fantastic bold, strong taste and aroma.
